ABOUT THE PRODUCT
Our original Bologna mix is a classic old-fashioned recipe, the perfect blend of coriander, pepper, nutmeg, and garlic. One of our oldest and most popular recipes, it is full of savory and delicious flavors.
Pairs well with all wild game and domestic meats.
Usage: Most often used for ring bologna. Our most popular mild bologna seasoning that can be used with various combinations of beef, pork, veal, mutton, goat, or deer meat.
Directions:
1. Combine seasoning packet, quick cure packet, binder flour, & water (1 cup per 10lbs of meat) with meat mixture until tacky.
2. Fill pre-soaked casings with meat mixture, fasten with string at desired length, & refrigerate overnight to cure.
3. Bake at 180-200°F in oven or smoker until internal temperature reaches 165°F.
4. Cool & refrigerate or freeze for long-term storage.
Kit includes: 8.80oz Seasoning, 3.6oz Binder Flour, 0.4oz Quick Cure.
